I really want to get chickens, but the issue with my folks is "what do we do with them when we go away?"

 

Food and water being a concern , as well as eggs not being removed - Is there any other safe way ,other than roping in a neighbour or friend to come in daily to check up on them. Can they be left with enough food and water and for how long.

Welcome to the forum . You can leave them alone for up to 2 days but for any longer than that you would really need someone to fill up their feed and water and remove eggs. You could get away with someone coming in every 2 days (I did, successfully, last year!).
