henny penny Posted August 18, 2009 Share Posted August 18, 2009 For all you courgette growers with too many courgettes .- I made the following with left overs in the fridge and hubby who isnt keen on courgettes liked it! I am afraid the amounts are very vague several courgettes chopped and sliced Onions sliced could add a little garlic if liked bacon pieces/ lardons Potato peeled and chopped chicken stock salt and pepper Sweat the onions in some olive oil and then add the bacon pieces and cook further until light golden coloured and the bacon cooked. Add the courgettes and the potatoes and cook for several minutes . Add the stock and simmer unil vegetables are cooked. Add salt and pepper and liquidise with a handblender. Taste and season if necessary. Some cream can be added at the last minute if required. I also made courgette and ham quiche. This involves grating the courgette and adding to the bacon (or ham pieces) and onions that were gently sauteed and proceeding as normal with the egg , milk/cream and cheese mixture. if I have time I will post the recipe i have for a crustless courgette quiche- if any one is interested!
