chickencam Posted August 20, 2009 Share Posted August 20, 2009 Spicy Courgette and nut cake:- This recipe makes 2, I halved it and made one using 2 small eggs from my newbies. I was a bit cautious incase we didn't like it, but it is lovely, a sweet, moist nutty cake not unlike a date and walnut. 500g or 1lb 2oz of caster sugar 250ml or 9fl oz of vegetable or corn oil 3 eggs 5 tbsp milk 500g or 1lb 2oz courgettes grated co"Ooops, word censored!"ly 750g or 1lb 10oz self raising flour half tsp baking powder 1tsp bicarbonate of soda 1tsp ground ginger 1tsp salt half tsp ground cloves 200g or 8oz walnuts roughly chopped preheat oven to 140c or gas mark 3 grease and line the base of two 2lb loaf tins mix together the oil, eggs, milk and sugar, then add the grated courgette fold in the sifted dry ingredients, salt and nuts. pour into loaf tins and bake for 1hour 15 minutes until golden and well risen. remove from tins and cool This recipe came from out local paper at the weekend Quote Link to comment Share on other sites More sharing options...
