Chutney Recipes for Christmas Hampers Thread 2009

OK, here are all the recipes I have promised:

 

Courgette Chutney

1kg Courgettes, chopped

500g onions, finely chopped

300ml water

1 tablespoon salt

1 tablespoon mustard seeds

75g sultanas

2 teaspoons ground ginger

1 teaspoon turmeric

3 chilli, left whole

600mls spiced preserving vinegar

500g demerara sugar

 

Place Courgettes and Onions in a preserving pan, with water, salt and mustard seeds, simmer for 20 mins. Add everything else apart from sugar, bring back to boil and simmer for 30 mins. Add sugar and boil steadily for 30 mins until thick. Remove chilli and pour into warm sterile jars. Leave for 3 months before eating.

 

Curried Veg Chutney

1kg of veg mix (I use Runner Beans and Courgettes usually) finely chopped

500g onions, finely chopped

300ml water

1 tablespoon salt

1 tablespoon mustard seeds, cumin seeds and coriander seeds

75g sultanas

1 tablespoon black onion seeds

2 teaspoons each of ground ginger, garlic powder, crushed chillis, turmeric

1 tablespoon each of Garam Masala, ground Cumin and ground coriander

600mls spiced preserving vinegar

500g demerara sugar

 

Place veg, water, seeds and salt in preserving pan, simmer for 20 mins. Add everything else apart from sugar, bring back to boil and simmer for 30 mins. Add sugar and boil steadily for 30 mins until thick. Leave for 3 months before eating.

 

Barbecue Chutney

500g Courgettes, chopped

500g tomatoes, chopped

500g onions chopped

200g apples chopped

300mls water

1 tablespoon salt

1 tablespoon paprika

2 tablespoons of tomato puree

2 tablespoons dried barbecue seasoning

2 tablespoons worcester sauce

600mls spiced preserving vinegar

500g demerara sugar

 

Place fruit and veg, water, and salt in preserving pan, simmer for 20 mins. Add everything else apart from sugar, bring back to boil and simmer for 30 mins. Add sugar and boil steadily for 30 mins until thick. Leave for 3 months before eating.

 

Hope you enjoy guys :D As you can see they are all variations on a theme from the first recipe :D
