Ok I realise it's a stupid question but egg cookery is something I'm fairly new to- my Dad still reminds me of the day I asked how to boil an egg.( I would like to point out that I can't eat eggs as whole egg & subsequently bypassed that branch of cookery ) Quote Link to comment Share on other sites More sharing options...

Cinnamon Posted October 9, 2009 Share Posted October 9, 2009 I have used those rice pouches before & they are perfect for eggy rice. I chop some onion, spring or red usually, then fry it off with some red pepper,a bit of carrot maybe - whatever is in the fridge really (its a great end-of-the-week dish) Then addd the cooked rice & some Chinese 5 spice, & mix it up. Then add a couple of whisked eggs & keep it moving until they are all scrambley & cooked.Some cooked peas are good in it too. majorbloodnock Posted October 9, 2009 Share Posted October 9, 2009 I prefer to use sesame oil, but don't be too sparing. As has already been said, add your cooked rice, then give it a quick mix to coat it, then add in your eggs; I'd say about 3 eggs will be OK with rice enough for four people. When, years ago, I had a Chinese girlfriend, she told me to keep frying the rice and eggs until some of the rice grains started popping. If you stop before then, the result will be soggy.
