Delia's Oat and raisin crunchies

I made some of these the other day and they are really yummy, they are full of good healthy things,so they can't be that bad for you either, if you ignore all the sugar :lol:

 

Makes about 30

 

3oz / 75g butter or margarine

6oz / 175g soft brown sugar sieved, I used light brown soft sugar

7oz / 200g medium oatmeal

4oz / 110g wholemeal flour

1/2 tsp sodium bicarb

1/2 tsp salt, I used about 1/4 because I don't like things too salty.

3oz / 75g raisins I used a few more, because, I like to see my fruit.

1 size 2 egg beaten

 

preheat oven to gas mark 4 (350F) 180 c

 

grease baking sheets

 

melt the fat in a small saucepan very gently, then remove from the heat and allow to cool a little before adding to the beaten egg.

 

Measure the reat of the ingredients into a bowl, then stir in the egg/fat mix and mix to a stiff paste.

 

Form the paste into small walnut sized balls, this is easier with damp hands. Place then onto the baking sheets leaving enough room for them to spread a little.

 

Bake for 10-12 minutes, I did mine for nearer 16 minutes, but all ovens vary, so keep an eye on them they could burn quite quickly due to large sugar content. They should be just firm to the touch in the centre.

 

Leave to cool on the baking sheets then ease them off with a palette knife and enjoy :D
