abwsco Posted December 21, 2009 Share Posted December 21, 2009 Well, I've ordered a whole free range turkey rather than a crown but want to put a flavoured butter between the skin and the meat ala Jamie BUT what do I flavour it with. Parsley and thyme would do very nicely, but here are a few others that might do well. tarragon chives lemon and dill paprika horseradish Realistically, it may be your other accompaniments that'll decide which flavour is most appropriate. I'm afraid I'm going to have to buy my herbs I'm doing the usual of roast spuds, roast parsnips, carrots, sprouts, bread sauce, apple sauce, cranberry sauce, sausages wrapped in bacon. With three different sauces on offer, the horseradish or chive butter might work, but I'd probably go with your original suggestion of parsley and thyme. The others are pretty distinctive flavours, and might end up being a bit too much given the variety you've already got there. Only my opinion, of course..... You could end up with too many flavours....but then I seem to be odd in that I prefer my meat to taste of what it is and very rarely add herbs unless it is to the cheaper cuts of meat.
