kerryegg
I have found a recipe using self raising flour, sugar and beer. Has anyone tried it and would lager work instead of beer? Thanks for any advice.
majorbloodnock
Hmm. OK. Several questions in one. Would lager work instead of beer? Yes, although the taste will be slightly lighter. Have I tried this recipe? No. Have I tried similar recipes? Yes. Various recipes for making bread with a plain flour/baking soda combination all fall under the generic heading of soda bread, and it's very well established and accepted. Typical soda bread doesn't add sugar, and uses buttermilk instead of beer as its major liquid component. However, your variation would turn out fairly similar; in particular, the texture will be rather more cake-like and heavier than normal bread since there's little gluten to provide the elasticity. Delicious toasted and smothered in butter.
kerryegg
Thanks. Due to the snow I may need to experiment when the freezer stocks run out. Used all the bread flour over Christmas hence only SR left. If all else fails we will just have to eat cake!
majorbloodnock
In that case, have a quick google around. In particular, things you might find of interest are: Soda bread. As mentioned earlier, it uses self raising flour (or plain flour and baking soda) along with buttermilk or live yoghurt. Fairly close texture, and perfect for dunking in soups and stews. Farls. Either soda bread or potato bread, but dry fried in a large skillet to form quarter circle wedges about an inch thick. A traditional part of an Ulster Fry breakfast Hot cross buns. Pizza doughs. There are several recipes with plain flour instead of strong.
