Recipe for Lemon Curd

Hi All

 

Can anyone help with a good recipe for lemon curd? We have entered the class in our local show next weekend but we've lost the antique cookbook we used by Molly Weir :doh: .

 

If anyone has a copy of the book by Molly Weir that would be perfect but I don't think its that common :(

Have always wanted to do it, but have never got round to it. It comes from a book by Mary Ford, whose recipes for jams and chutneys we always use.

Ingredients:

lemon peel from 4 lemons

140ml lemon juice

85g butter

140ml eggs

340g granulated suger

 

1. closely peel the rind off of 4 lemons

2. squeeze and measure the lemon juice

3. melt the butter in a heatproof bowl over a saucepan of boiling water, then add lemon, suger and rind

4. stir over the heat until sugar is dissovled, then stand the bowl in cold water to cool.

5. Beat the egg lightly, without frothing

6.when butter and sugar mixture is cool, add the egg, stirring well.

7. strain the mixture

8. Return to the heat

9. stir constantly over heat until mixture starts to thicken.

10. when the mixture is thick enough it should coat the back of a spoon without running off.

11. when done, put mixture in jars, filling to the brim and put wax disks on top.
