fourfinches
Gougére I made this for tea last night. The filling that the recipe book suggested was very complicated and I didn’t have half the ingredients so I just made a ratatouille mix and used that . It was easy to make and disappeared quickly (just enough left over for me to have today for lunch Serves 4 - 6 Ingredients 300ml water 115g butter or margarine 150g plain flour 4 eggs 115g Gruyère or Cheddar cheese, finely diced 5ml Dijon mustard salt and freshly ground black pepper Method 1. Preheat oven to 200oC / Gas 6 and butter a large ovenproof dish. Place the water and butter together in a large saucepan and heat until the butter has melted. 2. Remove from the heat and add all the flour at once. Beat well with a wooden spoon for about 30 seconds until smooth. Allow to cool slightly. 3. Beat in the eggs, one at a time, and continue beating until the mixture is thick and glossy. 4. Stir in the cheese and mustard and season with salt and pepper. 5. Spread the mixture around the sides of the ovenproof dish, leaving a hollow in the centre for the filling. 6. Add filling to the hollow in the mix. Bake in the oven for about 35-40 minutes, until the outer pastry is well risen and golden brown. Morag
