I've just been to one of those arty-farty (but very nice) deli shops where they had a sort of pick n mix olive bar, but also on there they had the most wonderful mildish tasting garlic (whole cloves) preseved, i think, in vinegar with herbs (tho it doesn't taste vinegary at all). green Posted November 23, 2010 Share Posted November 23, 2010 My friend used to make them, but I can't remember how. I did, however, find this basic recipe online. 3 garlic bulbs 1/2 dl white wine vinegar 1 dl olive oil 1/2 tsp salt any spices and/or herbs you want to flavour the garlic with Separate the cloves and boil them for 3-5 minutes. Rinse with cold water, peel and put in a jar, covered with vinegar. Let them marinate for 3 days and drain. Mix the oil, salt and herbs/spices, pour this in jars over the garlic and mix well. They will be ready to eat in 5-10 days. The possibilities are endless, you could try adding some chillies and honey to the oil to make them sweet and hot or a mixture of garden herbs for a more subtle flavour.
