Cut up and peel a few nice big floury potatoes, boil until just tender in veg stock and set aside. Finely chop a large leek and an onion, place in a large shallow pan and saute in butter or oil. Add potatoes to pan and crush lightly with a hand masher, do not mash to death! Mix it all together in the hot pan and let it cook. At this point I like to add some frozen peas (optional). Season to taste OK this is a great crushed spuds recipe, and can be used as such ( I cram it into greased large cookie cutters to serve) but you can also transform it into.... Fish Pie by adding flaked smoked Haddock and sour cream and baking in an ovenproof dish or... Homity Pie by adding grated cheddar and piling into a shortcrust pie case or...... A topping for Shepherd's Pie..... The base for potato and garlic soup by adding a roasted garlic head and chicken stock. If anyone can come up with another use for it I'd be delighted!
