C&T Posted April 23, 2011 Share Posted April 23, 2011 Hello. Hoping you can all help me! SIL has just been diagnosed with Diabetes, as part of being pregnant, and she is already missing cake!! I was wondering if there is anything that I can make that is diabetic friendly, that anyone can recomend? Be it cake based, or anything else that appears "naughty" but is fine for her to eat. I think she uses that half spoon stuff. If you look up Slimming world roulade - that used sweetener instead of sugar. I'm sure there will be other Slimming World recipes suitable too. ClaireG Posted April 24, 2011 Share Posted April 24, 2011 I am diabetic and have used this recipe before and can recommend it. You can use other flavourings apart from cocoa, eg lemon. I have also used 50g of SR flour before instead of the flaxseeds and it has worked well. Ingredients; 50g ground golden flax seed 200g ground almonds 1 tablespoon baking powder 10 teaspoons splenda 4 tablespoons cocoa powder 5 eggs 1/3 cup melted butter ½ cup water Method Mix all the dry ingredients in a separate bowl. Whisk the butter and eggs together, then add water and whisk. Add dry ingredients and whisk. Place the mixture into a bread tin and bake at 170c for 50mins depending on your oven.
