I would like to make a meal from them rather than just use them as a side dish. I am not really much of a cook so any simple ideas would be much appreciated. kinsk Posted September 7, 2011 Share Posted September 7, 2011 You could cut them in half, scoop out the seeds, brush with oil, season and roast in the oven for about 30mins. Then put some k"Ooops, word censored!"s of butter, grated cheese (gruyer works well) chopped chilli in the scooped out bit and back in the oven for about 10-15 mins. You can vary the cheese, add some chopped up bacon, chorizo, pancetta, some fried onion. Or stuff with bolognese sauce and top with cheese and put back in the oven. There was a Valentine warner version where he did it in the microwave. Or you could chop it into wedges, roast with whatever seasoning you want and use it in a salad with some shreds of slow roasted duck and a citrussy dressing.
