Triple chocolate brownies.

I made some gorgeous brownies today - my OH was shocked! (well, he feigned surprise, he's kind to me like that :()

 

 

I thought I'd share the recipe.

 

Makes 16 generous brownies.

 

Brownies:

 

100g butter , chopped

200g dark chocolate , chopped

4 eggs

250g caster sugar

100g plain flour

1 tsp baking powder

30g cocoa

 

Heat the oven to 180C/fan 160C/gas 4. Line a 22cm square brownie tin with baking parchment. Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature. Whisk the eggs and sugar together until the mixture is light and fluffy.

Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa. Fold this in to give a fudgy batter. Bake for 25-30 minutes or until the top is cracked but the middle just set. Allow to cool in its tin.

 

Chocolate icing

 

200g milk chocolate, chopped

200ml double cream

White chocolate shavings to decorate (optional)

 

Put the chocolate into a bowl. Pour the cream into a pan and heat until simmering. Take off the heat and pour it over the chocolate. Stir until the mixture is smooth. Cool, then chill, until really thick but spreadable.

 

Once the brownie tin has cooled completely, turn it out onto a wire rack and carefully remove parchment. Flip it back over, and spread the creamy chocolate mixture generously over the entire area. Sprinkle with white chocolate shavings as little or as much as you like, and cut the brownies into 16 pieces.

 

Voila!

If anyone wants cheap dark chocolate for cooking that tastes great try Morrisons value range 30p per bar and honestly it is fantastic, choclate cookery without the cost guilt, still got calorie guilt but I can deal with that. I also love Bournville cocoa so much better than anything else for that really chocolatey hit. :D
