Rhapsody Posted June 25, 2007 Share Posted June 25, 2007 Ok so obviously salad recipes are not popular around here I'll go back to something fried This is a one-pan supper/lunch dish serve with green salad (or hunks of fried lard ) its great for using up what's left in your fridge from the weekend.... For 2 people- 1/2 red pepper (or green or yellow but red is prettier) 1/2 onion 4-5 cooked new potatoes, cut into 1 inch cubes 4 beaten eggs 1 tsp ground cumin 1/2 tsp chilli powder 1 tsp turmeric or saffron (for colour) Fry the onion and pepper in 1tbsp olive oil, add spices and cook until onion starts to brown. Add cooked potato and stir for about 2 min. Add eggs and gently ease them into the spaces around the veg DO NOT STIR. Leave on medium heat for about 5 min, then under a hot grill until the top is cooked. Enjoy hot or cold. Tip- use a small ( I use an 8-inch) frying pan so the tortilla is nice and fat and chunky and slices well. Quote Link to comment Share on other sites More sharing options...
