eggs for baking etc.

Can anyone advise me how many bantie eggs i would need for recipes. Some of the cake recipes I use call for 3 eggs which are medium to large. I have just weighed the eggs i have had from my girlies this week and they range between 35g and 45g. Would I have to weigh the medium or large eggs then just add however many bantie eggs make up the same weight? Obviously they probably wouldnt come out to exactly the right weight so would I just go over to the nearest? :?

If it's a sponge cake, I just weigh the eggs and match the weight in sugar, fat and flour - works perfectly every time.

 

Otherwise, Michel Roux says that small is under 53g, 53-62g is medium, 63-72g is large and over 73g is very large. I'd just see what the recipe recommends and weigh bantam eggs until you get within the range you want - I don't think 5 or 6 grammes either way would make a huge difference.
