lisa33 Posted November 13, 2007 Share Posted November 13, 2007 Hi Everyone, Does anyone have a (easy) recipe for Carrot Cake? I have loads of carrots in the fridge that need to be used up. Neither the girls or Andyman eat carrots and I haven't got round to eating them myself. I'm not very good at baking but I thought I'd have a go. Please can anyone help? Snowy Posted November 13, 2007 Share Posted November 13, 2007 This was easy to make and turned out nice, although it's not quite the same as the shop bought ones. I'd be tempted to chuck in some ground, mixed spice next time as well: 140g butter or marg 140g soft brown sugar (I used light, but maybe dark would give it a bit more richness) 2 large eggs 225g self raising flour 2 teaspoons baking powder 1 orange - juice and zest of 175g grated carrot - pat dry with kitchen towel if looks too damp 1/2 teaspoon vanilla essence 55g sultanas Preheat oven to 190c, 375f, gas 5 grease and line 7" square tin Cream butter and sugar, beat in eggs then fold in flour, baking powder, orange zest and juice, grated carrot, vanilla and sultanas. Chuck into tin and bake for 45 - 50 minutes When cold, coat with icing made from 225g icing sugar and the juice of another orange. Quote Link to comment Share on other sites More sharing options...
