Louise Posted July 8, 2005 Share Posted July 8, 2005 Egg Fried Rice (my way) Basmati Rice Vegetable Oil Eggs Wash the rice under a fast tap of cold water to remove excessive starch this stops the rice being sticky and heavy Boil rice until it is cooked to your own taste I like mine slightly firm not soggy but it up to the individual Wash the rice again with a kettle full of boiling water this removes the last of the loose starch and should give you lovely fluffy rice if you eat it now. Heat oil in a wok. Add the eggs for one person I would use 2 eggs for two people I would use 3 but again if you like it eggy add more if not add less. Once the eggs are starting to cook but still quite raw add the rice and keep stirring until the grains are coated and the eggs cooked to you taste I like the egg well cooked but you can keep it quite loose. Some people cook the egg like an omelette and kind of tear it and add it to the cooked rice if you don't want the grains coated.
