SarahJo Posted September 22, 2005 Share Posted September 22, 2005 XMAS CAKE ... my Mums old recipe, using a Kenwood Chef .. though I am sure you can adapt if need be . 10 oz Plain Flour 8 oz Butter 7 oz Moist brown sugar 4 large or 5 med 's 2 oz Chopped Almonds 4 oz Glace cherries (chopped). 2-4 oz Mixed peel 1-1 1/2 Lb Dried fruit 1 Tablespoon Black treacle 1/4 Teasp Nutmeg 1/4 Teasp Cinnamon 1/4 Teasp Mixed Spice 1/4 Teasp Bicarb o Soda 1/2 Teasp Salt Rind of 1 Orange Brandy or Sherry ... to FEED whilst in storage before Marzipan and icing. METHOD 1. Line and grease a 9" Cake tin. 2. Warm bowl and K-Beater (as in Kenwood Chef) 3. Sugar, Butter Orange rind ... creamuntil white and fluffy. 4. Add treacle, and Mix. 5. Add 's one at a time, thoroughly beating each. 6. Add sifted flour, salt, spices, Bicarb. 7. Add fruit and nuts. Turn mix into tin and bake at 300 F for 1hr .. or 275 F for 2 1/2 hours. Skewer and check for "readiness" ... you all know what I mean. Some prefer a soggier cake so judge accordingly I say. . When cool .... make holes in the bottonm and give a drink of something warm ... port, brandy and sherry are the usual tipples. Keep in an airtight container ... and offer liquid refreshment accordingly, then marzipan and ice as you like.
