Lesley Posted December 30, 2005 Share Posted December 30, 2005 We're going to make chicken curry today - for me, it will be my first meat curry ever Carl has always mixed his own curry spices so I thought I'd put the curry powder recipe in here. It's from a book called Creative Cooking with Spices by Jane Walker "When individual spices are combined the aromatic result is often greater than the sum of the parts. Heat all seeds in the oven or frying pan until a rich aroma is given off. Coriander and Cumin seeds should not be heated in the same pan. Use an electric grinder. A coffee grinder will work well but keep one separately for spices. Seive well and keep in an airtight jar in a dark and cool place. These mixes improve day by day for the first few weeks but then start to lose potency so make small amounts. The numbers beside the spices indicate the proportions. Curry Powder Cumin 1 Coriander 4 Fenugreek 1/2 (half) Turmeric 1 1/2 (one and a half) Black Pepper 1/2 Cardamom 1/4 (quarter) Chilli 1 (Vary chilli according to taste) Garam Masala Cinnamon 3 Black Pepper 2 Cloves 2 Mace 1 Cardamom Seeds 1 Bay Leaves 2 Quote Link to comment Share on other sites More sharing options...
