chickencam
On Saturday YD had a desire to bake a cake and found this recipe in Merry Berry's Fast cakes book. It is really delish like chocolate orange in fudgy cake form. Would also make a great pudding. 4.5oz 112g selfraising flour 1/2 oz 12.5g cocoa powder 1 level teaspoon baking powder 4oz 100g soft margarine 3 oz 75g caster sugar 1 tablespoon golden syrup 2 eggs beaten 2 oz 50g plain chocolate grated - the grating took a while it would have been easier with thick chocolate. grated rind and juice of one orange Heat oven to 325 F 160 C gas mark 3 grease and line a 7 inch round tin beat all ingredients together for about 2 minutes until thoroughly blended turn into tin and bake until cake is well risen and has shrunk from the sides of the tin, about 45 minutes. cool on wire rack. Ours was cracked on the top and sank back a bit when cooled it was slightly fudgy in texture I don't know if it was meant to be but it was lovely. chickencam
I've just made another one, which I am going to send to my mum for her birthday. She has broken her arm in three places including a big chunk out of her shoulder joint. My dad had never baked a cake in his life and she is not going to have the greatest of days. She is having surgery on Thursday next week to pin it all back together

chickencam
My mum loved her cake and I think my dad did lots of helping when it came to eating it. I will have to make him a cake for his birthday this weekend. Any suggestions for a cake that will survive postage? The chocolate one is quite fudgy so it was fine.
