CHERRY AND ALMOND CELEBRATION CAKE Ingredients 1lb 12 oz mixed dried fruit 1 small packet of dried cranberries 10oz mixed colour glace cherries 4oz blanched almonds, slightly toasted and chopped roughly 14oz plain flour 2tbsp mixed spice 4oz ground almonds 14oz soft butter 12oz light brown sugar (soft) 1 orange (zest and juice) 6 medium eggs Amaretto liqueur Method lightly grease and line a 9 inch round tin and pre heat oven to 120c. Place all the dried fruit inc cranberries and almonds and stir. put aside. Sift the flour and mixed spice and stir in the ground almonds. put aside Cream the butter and the sugar until fluffy. Add orange zest Add the eggs to the butter mix with 1tbsp flour at a time. Fold in the rest of the flour and then add the fruit. Mix well. Stir in the orange juice. Stir until all ingredients are well mixed. Place in the prepared tin (see below) and bake for 3-3 1/2 hours. Remove from oven cool for 30 mins then pour over amaretto. Allow cake to cool in tin completely then remove all lining and rewrap with fresh greaseproof paper. Store until ready to decorate. around the outside of the tin, tie a few sheets of newspaper folded length ways so it stands a good few inches higher than the edge of the tin. this really help it to stay moist. after a couple of weeks storage prick the surface and feed generously with more amaretto. mmmmmmmmmmmmmmm Quote Link to comment Share on other sites More sharing options...
