How long can you keep your eggs?

Hi, I know all about the floating/sinking egg test thing, but just wondering if I give eggs to people at work, what dates should I put on the box, eat by or best before.

 

I have a feeling I've read somewhere it's something like 3 weeks after they've been laid is this right?!

Because I wasn't as well organised as I'd planned to be, I found that eggs that were laid at the end of May were still passing the float test at the beginning of July. They had been kept at room temp in my cool kitchen.

 

Keep in mind that raw eggs can be frozen (separated, whole or scrambled slightly) with a quarter teaspoon of salt or sugar (and labelled thusly so you will know whether to use them for sweet or savory dishes).

 

Please correct me, eggsperts, if I'm wrong!
