Olly Posted August 4, 2008 Share Posted August 4, 2008 I've been making my own - Waitrose do a yummy butternut squash one that I wanted to copy so I just baked the squash, pureed it and then added three beaten eggs and a bit of cream, and some caramelised onions on top, that one was lovely. I did spinach and red pepper last week - same thing, cooked the veg, pureed them with a hand blender and then spread them in swirls in the pastry case and poured the egg-and-milk over them. I can't make pastry so I use 'food-processor pastry'. Take 2 oz very cold butter, 4 oz flour, and whizz it in a food processor till it's in fine crumbs. I don't know this chicken keeping is changing my life, I keep baking to use eggs, and spent yesterday afternoon deciding where the OH can errect a greenhouse in the spring!! If you make your own pastry either by hand or in a processor add the zest of a lemon to the pastry mix. Scatter the pastry case with some prawns. Fry some chopped onion and add a handful of whizzed up watercress for the last few seconds add to the egg and cream mix before pouring into case.
