Strawberry and Rose Petal Jam Makes about 1.8kg (3-4lbs) 6 unsprayed, scented red or pink roses 1.25kg strawberries 800g jam sugar juice 1 lemon 2 tbsp rose water 1. Remove petals from roses and wash under cold water. Cut off the white "heel" from the petals as this is bitter. Set aside. 2. Hull and halve the strawberries and put in a preserving pan with the sugar. Put over a low heat and allow the sugar to dissolve slowly. Stir regularly to stop it sticking to the bottom of the pan. 3. When the sugar has dissolved, increase the heat and bring to a boil. Remove any scum which forms and boil fast over a medium heat for about 20 minutes until it begins to thicken. Check for a set using a chilled saucer or use a jam thermometer to make sure that it's boiled well at 105C. 4. Once the jam has reached setting point, add the lemon juice, rose water and petals and cook for a further 2-3 minutes. Remove from heat and allow to stand for 2 minutes to prevent the fruit from sinking when it's put into jars. 5. Pour jam into warmed, sterilised jars and cover immediately with lids or waxed discs and cellophane. Set aside until completely cold. The Dogmother Posted July 4, 2006 Share Posted July 4, 2006 Oooo, thanks for that - how much do you want for it and I'll be sure to have some dosh on me (like the queen, I never have any money on me ) I really love Crab Apple Jelly, and used to get it from a friend in Norfolk who had her own organic cafe, but she's closed up and moved away now so I get it locally. Our little crab apple tree is laden and I love the stuff! I made a couple of jars last year with the few fruits we had on the tree then went and smashed a jar when it fell out of the larder - gutted!! I'll be more careful this year!!
