Diabetic birthday cake recipe needed!!

Does anyone have a recipe for a diabetic birthday cake?

 

It's my Mum's 70th birthday on boxing day and she's recently been diagnosed as a diabetic. She's also had a double heart bypass operation earlier this year, so I probably shouldn't be encouraging her to eat anything cakey at all, but I just thought that a little of what you fancy, does you good!

 

I would really appreciate any of your suggestions! :D

Have checked my diabetic cook book & it doesn't have any recipes for cake :shock: !

 

Would this be any good? I'd have thought the sugar could be replaced by Splenda or similar sugar substitute?

It makes a lovely moist apple cake, with very little fat too, which is another problem with diabetics. I tend to make mine with dessert apples, but maybe it would be ok without the sugar altogether...may just have to try it out!

 

Poor Mum, I have two friends with diabetic kiddies, one has just been diagnosed (boy of 15) & the other was diagnosed at 4 (she's now 11) & is also coeliac - a fun combo! They are both injection dependant, is Mum simply diet controlled (simply in an odd kind of way!!) I would imagine to embark on a regime of diet and injections at 70 would be a bit of a nightmare!

I'll give the recipe a try... it sounds promising! :D

 

Mums diabetes is being controlled with tablets at the moment, along with cutting out all the naughty foods that she loves... It's only a matter of weeks since she was diagnosed and she's hoping that she won't have to go down the injections route. Poor Mum, she's had such a lot to cope with this year, so we just want to make sure that she has a special birthday! :)
