What size egg is a medium egg??

Can you help!

 

When a recipe says a medium egg - what sort of weight is a medium egg?

 

I am planning some baking using our own eggs for the first time, and wondered if the omleteers can help me!

 

I used to go out and buy a box of medium eggs. But now, I have all different size eggs on my stand... And not sure which ones to select, or if they are all a bit too small... :oops: (well, she has only be laying a week or so... :D )

If a recipe calls for '3 large eggs' and I only have small or medium eggs, then I tend to use four medium or five small. It's a mixture of experience and guesswork for me! I haven't got one of those ultra sensitive digital scales that weigh in grams...hmmm, I've been good. Maybe I should ask Santa for one (Having said that, my recipes have come out okay using guesswork). :D

My speckledy hen lays quite small eggs, despite being the largest bird in the run, and I also tend to 'round up' if I'm making something that needs four eggs, and maybe add two small ones and three larger ones. I have got a digital scale, how can you live without one Saronne - when you get a monster double-yolker, you will want to know how much it weighs! :wink:

 

For a basic sponge recipe, however, I just weigh the eggs and then match the weight in fat flour and sugar - works every time for me.

Ohhh...that's clever. Never thought about equal weights for eggs to fat flour and sugar. Right. Now I really want a digital scale. What make have you got? :mrgreen:

 

I always use this method now and can throw together a sponge in minutes! I've not looked at a recipe since :lol:
