One, it's a fabulously easy and delicious pudding for those who don't like Christmas pud and two, I just had a panic because I couldn't find the cutting with the recipe on so if I post it in here, I can find it again next year .........oh and three, it makes 2 cakes so you can pop one in the freezer for another time! I made this recipe last year and it really is delicious. Christmas Mincemeat Streusel Cakes - makes 2 cakes Topping: 200g plain flour 200g soft brown sugar 1/2 tsp ground cinnamon 1/2 tsp grated nutmeg 150g butter Cake: 200g self raising flour 1 tsp baking powder 200g soft brown sugar 150g butter plus extra for greasing tin 2 large eggs mixed with 4 tbsp milk 400g top quality mincemeat 100g dried cherries icing sugar to dust 1. Butter 2 x 20cm loose bottomed cake tins and line with greaseproof paper. Preheat oven to 180C/GM4 2. Make topping: combine flour, sugar and spices. Rub in butter until the mixture resembles fine breadcrumbs. Set aside until later. 3. For the cake: combine flour, baking powder and sugar. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the egg and milk. Divide evenly between the two tins and level the surface. 4. Spoon the mincemeat over the cake and spread in as even a layer as possible (not easy so don't worry about gaps). Scatter the cherries over the top, followed by the crumbly topping. 5. Bake for 45 minutes then reduce the heat to 170C/GM3 and bake for another 15-20 minutes, covering the cakes lightly with foil if they begin to brown too quickly. Let them cool for half an hour before turning onto wire cake racks until cold. Dust the tops liberally with icing sugar and store in an airtight container. Chook n Boo Mum Posted December 19, 2008 Share Posted December 19, 2008 Help! Am I being daft? (I can hear the echoes of yes, thank you !!) How do you check if this is done? I've never made one before & am so use to sponges which are firm to the touch, or leave no stickiness on the skewer. Do the same apply here? They will be sticky in the middle as the mincemeat will be gooey so don't worry if a skewer comes out all sticky. If the top is lightly browned, it'll be done perfectly. Chook n Boo Mum Posted December 31, 2008 Share Posted December 31, 2008 Have made this recipe twice now & it makes two each time; first one (I make them in loaf tins with Lakeland greaseproof liners - so easy!!) went with us to a friend's house & was served with homemade vanilla icecream , second one was simply devoured with cups of tea! Second batch - one went to SiL's & barely touched the serving plate & last one somehow disappeared......no idea how or where though The first batch I cooked for a bit longer & didn't sink so much as the second batch. I think next time I'll cook it for a little longer as I don't cook it in my fan oven, just my little one. Both yummy, which ever way I do it though! Will try it with other fillings other than mincemeat too. BTW, I didn't add the dried cherries (?) as I didn't have any, may even try that one day too!! I didn't have dried cherries either but substituted glace cherries and it worked really nicely. Scrummy!! We have our second cake in the freezer for a day when I don't feel like cooking a pudding . Sha x Funnily enough, that is exactly how I made mine - loaf tins with lakeland liners and no cherries!! We don't do cherries as I am the only one who likes them I've made the same mistake in the past, I think things done in the loaf tins instead of round cake tins do need a bit longer.
