Bigger than our largest Maran egg and more pointed at one end than any chicken's eggs I have seen, creamy coloured with lovely brown speckles! SAB Posted March 29, 2009 Author Share Posted March 29, 2009 Well, from surfing the net I discovered that turkey eggs are best scrambled or in baking for fluffy texture, but not recommended for frying due to very large runny yolk. So...today I had scrambled turkey egg! The ratio of yolk to white was high, but much less yellow than our chicken eggs. Made lovely creamy scrambled egg, with delicate flavour - not as strong as chicken eggs. One egg was enough for a good amount of scrambled egg for one person (enough to put on 2 slices of toast).
