sunshinesupernova Posted May 4, 2009 Share Posted May 4, 2009 I bought some lovely new jars.....two different sizes To cut a long story short - they've send me all the wrong size lids and I didn't realise until I went to put sterilised lids on the jars. I put the jam back in the pan and brought back up to heat and poured into more jars I'd sterilised. It isn't totally cool yet - but looks awfully runny. Could I have over done it ? Or if it doesnt make a good enough set, can I boil it up again ? I dont normally have a problem - my jam usually comes out right first time ! ..lay a little egg for me Posted May 5, 2009 Share Posted May 5, 2009 Not a jam expert but I have read that over-boiling destroys the pectin so it won't set. chickencam Posted May 5, 2009 Share Posted May 5, 2009 I would have thought you could reboil it, but the only time that I have done that it went like concrete. My jam is usually on the runny side but so long as it goes into hot sterile jars and is sealed immediately with wax discs, and a tight fitting lid I find it keeps just as well.
