Martin B Posted October 19, 2006 Share Posted October 19, 2006 Pumpkin Jam Ingredients 450gr/1lb Pumpkin 450gr/1lb Sugar 1- 1.5 tsp Ginger (I used ground ginger) 2 tablespoons lemon juice Method Skin/peel the pumpkin and remove flesh and seeds. (chicken love pumpkin seeds) Cut pumpkin into 1.5cm/ .5inch dice. Put into the preserving pan with ginger and sugar Stir well to mix all the ingredients together Stir over a low heat until the sugar has dissolved Add the lemon juice and then boil steadily until setting point is reached Allow the mixture to cool sightly in the pan and stir to distribute the pieces of pumpkin. Spoon into hot sterilised jars and seal.
