Space Chick Posted June 13, 2009 Author Share Posted June 13, 2009 I tend to do it one of 2 ways: I grate it and put it in salad raw or I cut it into smallish cubes (probably about 1/2inch roughly), and I fry it in a little butter (or low fat spread ) until the outside has browned off and the inside is soft.
