Scrub your potatoes, cut a row of slits across the top, brush with oil and sprinkle with salt, pepper and/or any other seasonings and bake in a hot oven, about 30 - 45 minutes depending on the size of your spuds.

Gratin - peel pots and slice into scallops. Layer in an oven proof dish, alternating with onion. Pour over about half a int of milk with a beaten egg added. Season with salt and pepper and dot small blobs of butter on the top. Bake about 30 - 45 minutes until potatoes cooked and golden on top. Also nice sprinkled with grated cheese.

Plain mash, but add root vegetables to the boil - parsnips, carrots, swede, celeriac is especially nice.

Wedges? I can't eat them (allergic) but I make them for my OH.

 

Cut them in skins into wedges, par boil for 10mins, then cook on a baking tray with olive oil and seasoning at Gas Mark 7 for about 45mins.

 

Not that quick but OH loves them :D

I don't bother parboiling them, they still take about 45 minutes 8)

Cubed herby potatoes - my kids favourite.

 

Heat a baking tray in oven with a splosh of oil

 

Wash and dry potatoes (leave skin on - they won't notice) and chop into cubes, the smaller the tastier and faster, (but bigger = healthier!). Chop some fresh rosemary with some garlic and a small sprinkle of salt.

 

Add everything to tray, coat with the oil by stirring a bit, and bake at 180 C for about 30 mins, turning half way through.
