Valkyrie Posted June 28, 2009 Author Share Posted June 28, 2009 I don't know where the original recipe came from - I probably took it to have something to use up overripe narnies and has been handwritten in my little book - I'm afraid it's imperial measurements though! Banana and Date Tea Loaf 8oz stoned dates chopped (actually I misread it which is probably why it wasn't too sweet - I put in about 14 dates instead ) half pint of milk (I used skimmed) 10oz wholemeal (nah, used ordinary) self raising flour 2 mashed bananas 1 teaspoon bicarb 4oz butter 3oz hazlenuts (I didn't use them) chopped 1 beaten egg. Heat the dates in a pan with the soda and milk, bring to the boil and then remove from the heat. Allow to cool. Rub butter with the flour to resemble breadcrumbs (or let the kitchen gadget do it for you) Stir in 2oz of the hazlenuts if you want them in the cake. Add bananas, dates, milk and eggs then mix well. Spoon mixture into a 2.5 lb loaf tin (and now I know why my 2lb one was just right). Sprinkle the top with the remaining nuts and bake at gas mark 4 for one to one and a quarter hours. Ahh, see what happens when you do the ingredients wrong? Luckily it turned out rather nice. So if you want it sweeter, add more dates - probably makes it a bit stickier too because mine was crumbly - but light! As DD has scoffed the remaining dates, I will have to go shopping again! I will have another go, but I think 8oz will be far too sweet, so will add a few more than last time. It still definitely has no other sugar in it though - didn't misread that bit!
