Chocolate Tart

This is so easy and so delicious I thought I would post it for you to try. It goes very well with a side helping of strawberries and/or raspberries, and a generous pool of cream.

 

Chocolate Tart

 

Base

Half a packet of bourbon biscuits (I used Sainsbury's own brand, very cheap)

1 oz of butter (I didn't actually weigh this just melted some in a pan)

Filling

200g of plain chocolate. Mine was 50% cocoa solids and has done the trick nicely.

200ml of double cream

25g of butter

50g of sugar

Vanilla essence

Optional slug of liqueur or similar (I used Calvados - not too much as I didn't want to introduce a lot of liquid)

 

Blitz the biscuits in a blender and add to the butter which is melting in the pan.

Add enough biscuits to soak up the butter and still look crumby. If required, add more butter, melt and stir in. Press the biscuits into the bottom of a flan dish. I used a pyrex dish, it's about 8" diameter. It depends how deep you like the crumb base to be. Put this in the fridge to set.

 

Over a gentle heat or in a double boiler, dissolve the sugar in the cream. Add the chocolate and the butter and allow to melt. Add the vanilla essence and any other flavouring that you are using.

 

Pour this onto the biscuit base. Allow to cool and put in the fridge and allow to set for 2 hours. Mine was even better the next day. Yum yum yum!
