Flavoured Oils

Well after reading all the inspiration on here, 12kg of assorted bottles and jars landed on my doorstep yesterday, ready for me to start filling for Christmas pressies... Wow it looks a lot!

 

The jams, and pickles etc I have planned are all sorted (made many many in the past!), and flavoured Vodka's I think I am OK with thanks to other topics on this site.

 

But I also wanted to do some flavoured oils. But all the receipe's/ideas I am finding at the moment say they only keep for a couple of weeks, and to keep refridgerated... Unless I just use Chilli's, in which case keep indefinitely. But as I am already planning the Chilli Jam I don't really want more chilli... Besides, can buy Chilli oil in the shops - I want to make something different.

 

Does anyone have any good flavoured oil ideas that will keep for more then a just a couple of weeks in a sealed sterilised bottle? Or is chilli the only answer...

I don't really want to poison anyone... (well, one or two of the inlaws could be useful.. :twisted: ) but no, I mustn't...

 

Will do research on vinegars.

 

Need to use the little bottles for something now I have bought them!

No... Have googled, and found this:

 

 

Fig vinegar

for one litre

 

250g ready-to-eat dried figs

75g runny honey

a sprig of thyme (or a teaspoon of dried)

a pinch of peppercorns (I used multi-coloured)

1 litre white wine vinegar

 

Snip the figs fairly small into a two-litre Kilner or Le Parfait jar. Add all the other ingredients. Shake. Put in a cool dark place for a week, shaking occasionally as you remember. After a week, decant into 4 sterilised 250cl bottles, using a funnel and sieve.

 

Keep in a cool dark place until you're ready to use it or give it away.

 

 

Says similar to Nigella's recipe?
