Space Chick Posted October 12, 2009 Share Posted October 12, 2009 This is a recipe that I have created myself following inspiration from Spain. We had it for tea tonight and it is yummy so I thought I'd share it incase you wanted to try it. Ingredients 2 organic chicken breasts (or free range/home grown ) 1 salami approx 200g (I use organic) 2 red onions 250mls white wine 1 tablespoon tomato puree 1 teaspoon of chilli flakes 2 finely chopped cloves of garlic 1 tablespoon flour 1 chicken stock cube 1 teaspoon paprika 1 teaspoon smoked paprika salt and pepper 1 jar roasted peppers in oil 100mls double cream Method Finely chop the onions, chop the chicken and salami into bite size pieces, cook in oil from the jar of peppers (about 1/2 the oil). Once the chicken is cooked add the white wine and boil quickly for about 4 minutes to burn off the alcohol. Add the tomato puree, chilli flakes and garlic and about 50mls water. Mix together the flour, stock cube, and paprikas. Slowly sprinkle over the top of the pan and stir in gently to avoid lumps. Add more water if needed and add in the roasted peppers (You can keep the remaining oil to use for other purposes!). Simmer for about 15minutes feeling free to loosen it with some more water, then add the double cream and stir in, season to taste.
