Storing homemade bread

Eventually, home made bread will never last as long as commercial bread, for the basic reason that preservatives are one of the obvious candidates for omission. Having said that, it also depends somewhat on the recipe you're using, since french bread (being low in fat content) is notoriously quick to go stale.

 

Personally, if I'm cooking up several loaves, I'll leave one for eating immediately and then slice up all the others and freeze them. If each sliced loaf is reassembled, none of the slices suffer from freezer burns, so they'll be perfect once defrosted again. As for terracotta jars, I find the biggest problem is size. The amount of bread I can fit in one is such that my family would have demolished it before it had a chance to go off anyway.
