Couperwife Posted February 9, 2010 Share Posted February 9, 2010 ive got this fabby recipe book that is 50 cookies and one dough the recipe is relatively simple, you just add what you want to it I did this one on Sunday night, it went down very well at my and kevs work on Monday Mega Chip Cookies (makes 12 large cookies - I made 24 not quite so large ones) 8oz butter softened 5oz caster sugar 1 egg yolk lightly beaten 2 tsp vanilla extract 8oz plain flour 2 oz cocoa powder 3oz milk choc chips 3ox white choc chips 4 oz dark choc coarsly chopped salt put oven on 190dec c/375 deg f, mark 5. line 2/3 baking sheets with parchment paper put butter and sugar in bowl mix well with wooden spoon beat in egg yolk and vanilla extract sift flour, cocoa powder and pinch of salt, add choc chips until all mixed up (now this is where I went off on a tangent) make 12 balls of mixture put them on the prepared baking sheet, space well apart and flatten slightly press in dark chocolate bake for 12 to 15 mins. cool on the baking sheets for 5 to 10 mins then carefully transfer to wire racks to cool completely (eat when still warm!! ) enjoy with nice cup of tea or coffee and hide them from the children or other family members cathy x Quote Link to comment Share on other sites More sharing options...

PurpleTree Posted February 10, 2010 Share Posted February 10, 2010 Probably too late now, but I've made these lemon biscuits a few times, they are yummy * 100g/4oz softened butter * 100g/4oz caster sugar * Grated rind and juice of 1 lemon * 1 beaten egg * 340g/12oz plain flour * 1 teaspoon baking powder * 1 tablespoon milk * Icing sugar for dusting. Grease a couple of baking trays and preheat oven to 170 C/Gas Mark 3. Cream the butter, sugar and lemon rind until light and fluffy. Add the egg and lemon juice gradually, beating well between each addition. Mix in the sieved flour and baking powder and add enough milk to form a dough. Roll out dough on lightly floured board to biscuit thickness and cut into rounds. Place on baking sheet and bake for about 20 minutes until pale golden brown. Leave to cool on wire rack then dust with icing sugar. Sure you could leave out the lemon and add some chocolate chips instead. Quote Link to comment Share on other sites More sharing options...
