ladyjulian Posted June 15, 2010 Share Posted June 15, 2010 A variation on scotch eggs! Brilliant for quail keepers who suddenly have too many eggs. Most supermarkets, and Holland & Barratt, sell a just-add-water vegetarian sausage mix. Boil the quail eggs for 4 - 5 minutes until hardboiled and peel. Make up the sausage mix and then add a small amount of beaten egg. Use the sausage mix to wrap each egg (you can do it without the beaten egg, but it doesn't work so well - unlike piggy sausage meat, the veggie mix doesn't hold together so well). Roll each wrapped egg in breadcrumbs and then fry them for a few minutes on each side until golden brown. Deep fry if you prefer and you have a deep fryer (I don't!) Next time I do these I will probably add some Lea & Perrins to the sausage mix, which was unfortunately a bit bland. They were still good though.
