HFW's Compost soup

In the River Cottage Veg Patch book in the bit about peas is a recipie for 'Compost Soup'

It sounds perfectly vile, but is surprisingly tasty and, as they say in the book, is all the more satisfying as the ingrediants were headed for the compost bin.

 

When you shell your peas, save the shells. Simmer them in some veg stock. They do reduce down so dont go to mad with the stock or your soup will be too watery. Simmer for about 5 mins and add some outer lettuce leaves. Simmer again untill the pods are soft. About 10 - 15 mins should do.

 

Puree or food process then season with a little sugar, salt and pepper. Mine was still a bit stringy so I pushed mine through a sieve to get rid of the stringy bits.

 

Its rather nice.

I think I will pass on this one, my peas have had a fair amount of pea weavil this year and I don't fancy the extra protein and YD certainly won't she hates shelling them because of the 'worms' :lol:

 

Edited to say that my girls would never forgive me either if I used outer lettuce leaves, they love them.

I think I need to re review this soup as I dont think my last review has done it justice.

 

I only tasted a spoonful out of the pan and put it in a a tupperware in the freezer.

 

We had it tonight for tea. I defrosted it partly and drained some excess water from it, re heated it and stired in a couple of tablespoonsful of single cream and it is fabby. I would give it a 10 now :D
