veggie spag bol recipe

I mentioned in one of my postings on the Harcombe Diet, that I had a nice and easy recipe for veggie spag bol, which I have now found, and so for anyone who is interested here it is Serves 4

 

1 each, onion, carrot, stick celery, red pepper

2 fat cloves garlic

2 tbsp olive oil

1 400g tin chopped tomatoes

100g/4oz red lentils

600ml/1pt vegetable stock (I use marigold boullion)

2 tsp dried oregano

1/2 (one half) tsp ground cinnamon

12 oz of spaghetti

 

1. Roughly chop, then whizz the veggies with the garlic in a food processor until finely chopped

2. Heat the oil in a large saucepan, then fry the veggies for about 8 mins until soft. Stir in the lentils, tomatoes, stock, oregano and cinnamon. Bring to the boil, reduce the heat, then simmer for about 20-25 minutes. Check the seasoning (depending on the stock you have used it may not need any),

3. Cook the spaghetti according the the destructions on the packet

et voy-la as Paul Whitehouse would say...!

Many thanks for pointing out that I had forgotten the essential tomatoes from my ingredients list!!...I use dried lentils which I buy from our large local tesco supermarket, as I am not lucky enough to have a proper indian foodshop nearby..they have an ethnic foods section where you can buy huge bags of dried pulses much more cheaply than from their healthy eating section...also I buy as many of my herbs and spices from there too...I seem to get through biblical quantities of cumin ..and find it much cheaper to buy in bulk! They also used to do papads...sort of poppadoms that you can cook under the grill very successfully, and at about 50p a pack much cheaper than crisps!!!
