Charlottechicken Posted November 19, 2010 Share Posted November 19, 2010 I had a doughnut baking tray, with recipe, years ago from Lakeland, I didn't like the baked doughnuts at all I don't know where the recipe is now, unfortunately. ali-s Posted November 19, 2010 Share Posted November 19, 2010 I had a doughnut baking tray, with recipe, years ago from Lakeland, I've also got one of those trays from Lakeland, bought it years ago when the children were small. The doughnuts are just the right size for a small child or bite sized for an adult. Just looked in my recipe folder and I still have the cardboard sleeve the tray came in with the recipe on the back. The doughnut mixture is a batter so you would need the special shaped doughnut tray to get the hole in the middle of the doughnut. I don't think Lakeland do the trays any more but a quick google and a site called westfalia have them, reduced from £7.99 to £4.99. Egluntyne Posted November 20, 2010 Share Posted November 20, 2010 There are umpteen recipes for baked doughnuts on 'tinterweb. Here is just one. They all seem to be much of a muchness. Using American Cup measures. 1/3 c. oil 1 egg 1/2 tsp. salt 1 1/2 tsp. baking powder 1/2 c. sugar 1 1/2 c. flour 1/4 tsp. nutmeg 1/2 c. milk Mix together until smooth. Line 12 muffin tins with paper baking cup. Fill only 1/2 full. Bake 15 minutes at 350 degrees. Remove from papers immediately. Roll in melted butter; then roll in mixture of 1/2 cup sugar and 1 teaspoon cinnamon. Best served warm. Be sure to check donuts with toothpick to make sure centers are done. I used to have the Lakeland tray. I'll have a hunt round and see if I can find it. I may have chucked it in the direction of a charity shop. ali-s Posted November 24, 2010 Share Posted November 24, 2010 Recipe for mini sugar dusted doughnuts for the mini doughnut tray. Preheat the oven to 160c/325F/Gas Mark 3 Lightly brush the doughnut pan with cooking oil. 225g/8oz plain flour 10ml/2tsp baking powder 5ml/1tsp salt 175g/6oz caster sugar 175ml/16fl.oz milk 2 eggs, beaten 15ml/1tbsp olive oil 5ml/1tsp vanilla extract extra caster sugar for dusting Sift flour, baking powder and salt into a bowl. Add the sugar and give it a stir to combine. In a separate bowl, whisk the milk, beaten eggs, olive oil and vanilla extract together and add this to the dry ingredients, mixing thoroughly. Using a teaspoon, carefully fill each of the doughnut cups around 3/4 full with the batter. Place in the oven and bake for about 8 minutes, or until firm, but springy to touch. Cool slightly. Sprinkle a little caster sugar onto a plate or other flat surface. Turn the doughnuts out and dip them (bottoms first!) into the sugar. Hey Presto! Fabulous sugar-dusted doughnuts in no time at all!!
