Couperwife Posted May 7, 2007 Share Posted May 7, 2007 I get a veg box delivered every week from a local farm and this week I get a butternut squash - I had no idea what to do with it until I found this recipe. which I would like to add it totally fat free and totally yummy (I put pepper in it to give it that little bit more!!) so here goes. butternut squash soup. prep - 15 mins cooking time 25-30 mins you need: 1 large onion - chopped 1 small carrot - chopped 750g butternut squash - peeled, deseeded, chopped 2 pints veg stock cooking spray salt / pepper to season garlic (if you want - i do!) 1. heat a large saucepan. spray with oil, gently fry the onion and garlic until soft (add a bit of the stock if it sticks) 2. add butternut, carrots and stock. bring to boil, simmer for 20 - 25 mins until stuff is soft. 3. puree with a blender. 4. add salt/pepper to season 5. serve with crusty bread. 6. enjoy. this should serve about 4 - but i normally eat most of it. try it, hope you like it.
