Turns out it was heart that had been opened out & bashed with a tenderising hammer. It was very nice. I couldn't eat the sea snails there though - they were huge! Perhaps eating cocks combs is a form of food s"Ooops, word censored!"bery? It's like the shark fin soup - it apparently doesn't taste of much - but people have it to say the've had it. The idea of cooking several meals on demand for different people fills me with dread, and I have the utmost respect for those who can do it. Me, I like cooking and can cook something reasonably edible for one group of people at a time, so long as timings can vary a few minutes either way. Decidedly a cook rather than a chef.
