no1smiles2000
hi everyone mum and dad have my chickens at the moment so with theres there are 11 and we are eggindated! Any ideas for reasonably healthy recipes to use them up? thanks Katie
chickencam
Omelettes, basic, Spanish, frittata, tortilla etc. Eggs go well with curry spices, so egg curries are good. Mayonaise, home made really is much nicer. Swiss Roll, although a sweet treat it is a fatless sponge so can't be too bad. Lemon curd is also a lovely one with your own eggs We also make waffles, we have a cheap Lidl waffle maker, but I suspect that you could make them as drop scones in a normal frying pan too. 200g plain flour 3 tbsp sugar 1tsp of vanilla sugar or a drop of essence 1/2 tsp sodium bicarb 500g pot of natural yoghurt, we have always used full fat, I don't know if it would work with low fat. 3 eggs just mix everything together and leave it to stand for 15 minutes until there are a few bubbles on the surface then cook and enjoy, this recipe makes about 10 waffles which are about the size of a tea plate. Lavenders_Blue
Pickled eggs Cheese and Leek Pudding (Okay, probably not healthy, but very yummy!) Eggy bread Or if you want to keep the eggs for use at a later date, you can freeze them. Crack into a container, whisk up a little, then pop into the freezer. It's probably best to freeze the eggs in 2s or 3s so that you can take them out in suitable quantities for cakes, omelettes etc.
no1smiles2000
Thanks everyone. I like the idea of lemon curd how long would this keep?
Lavenders_Blue
It doesn't keep very long as the egg is only partially cooked. However.... I have never found this to be a problem
