chickencam Posted July 24, 2013 Share Posted July 24, 2013 OH was seized by a desire to make orange ice cream at the weekend, he loved it as a child. He found a recipe in one of our many cook books and it had revolutionised ice cream making for us. This recipe uses whole eggs not just the yolks, it isn't cooked therefore not suitable for the elderly, pregnant or little ones, but it is scummy. We used 3 whole eggs separated 100g caster sugar 450ml double cream Zest and juice from two large oranges. Firstly juice and zest the oranges into a bowl and chill Then beat the egg whites until stiff and chill Then beat the egg yolks, adding the sugar gradually whisking all the time until they are very thick and pale, we used a hand held electric mixer for all stages. Again chill. Next whisk the double cream until softly whipped. Mix the orange juice and whipped cream with the egg yolk mixture then gently fold in the egg whites. At this stage chill the mix again if you are using a basic ice cream maker, or just pop into a container and freeze, or if you are lucky enough to have a posh expensive ice cream maker use that. We don't we have the basic freeze the bowl type. I made some lavender ice cream by the same method yesterday, I infused about 4 small lavender heads in 200 ml of milk and this didn't really make it strong enough so I put another one in an egg cup with a tiny amount of boiling water left it to cool and added that too, but it is still very subtle. They don't cook their mix either but I have adapted it for cooking so it is suitable for everyone. Yesterday I made strawberry ice-cream as I have so many strawberries in the garden; I use the attachment bowl on my KitchenAid which is frozen first. The mixture came up so much it was overflowing and OH and I had to scoop up all the excess with spoons and eat it straight away . Quote Link to comment Share on other sites More sharing options...
