Roasted Tomato, Red Pepper and Herb Soup

I meant to post this two weeks ago (when I originally made the soup) but only just got round to it today. Because of the awful weather I was beginning to think I would give up the plants that had survived the rain but, managed to collect these :

I chopped them roughly and through them in a roasting tray with salt, olive oil, garlic cloves and a few chilli flakes :

After they spent 50 minutes in the oven on Gas mark 6 I sweated off some onions in a saucepan, added in 1.5 pints of vegetable stock then scooped the roasted veggies into the stock. After simmering for 10 minutes I left it to cool then blitzed with my hand blender and ended up with :

And still had load of tomatoes left for salad! :)

 

And the soup was delicious!! :lol:
