MOUTCHENTRA - a simple Greek supper

This is a lovely, simple meal - and although it may look bland it is actually very tasty - even my husband who is a complete carnivore enjoys it. Just make sure you have some excellent quality extra virgin olive oil. I use Tesco's green lentils as they are in veg stock, which givens them extra flavour. Use one of the empty tins to measure the rest of the ingredients.

 

 

Moutchentra

 

2 tins lentils (rinsed)

1 1/2 tins chopped raw onion

1 tin brown rice (rinsed well)

2 tins water

1 vegetable stock cube

Olive oil

seasoning to taste

 

Sweat the onion in some olive oil. Add the rice, water and stock cube Bring to the boil and reduce to a simmer until cooked (and water absorbed). Add the lentils 15 minutes before the end, bringing back to a simmer.

 

Can be served hot or cold, with or without a splash of good quality olive oil.

 

We often eat it hot for our evening meal and then I take it cold to work the next day.

depends if it is just a quick supper or not. Normally I just do it with a salad as Lesley says, sometimes we just have it on its own. I dress my salad with olive oil, lemon and mint. I often serve my green vegetables with olive oil and lemon too.

 

Oh guess what we are having for dinner tonight ... :D
